Mmmm, Mmmm, Good!
Earlier this week, the wife and I got in the kitchen and whipped up a couple of really easy recipes and they turned out to be delicious. I thought maybe, just maybe...one of you might want to try them. If you don't, it's fine. Just showing a little southern hospitality, you know.
The first one surprised me at how good it really was. I don't like tomatoes but did enjoy this recipe. The topping has a flavor that sorta reminds me of pesto, so any of you pesto lovers will surely want to try this one.
TOMATO PIE
6 Roma tomatoes, peeled and sliced
1 baked pie shell
Salt and pepper to taste
3/4 cup mayonnaise
3/4 cup grated cheddar cheese
3/4 cup grated mozzarella cheese
1/2 cup chopped green onions, including tops
2 teaspoons dried basil
Preheat oven to 350 degrees. Layer tomatoes in baked pie shell. Season with salt and pepper. In a separate bowl, combine mayonnaise, cheddar, mozzarella, onions, and basil together. Spread mixture over tomatoes and bake 30 minutes or until lightly browned. Cut into slices and serve warm.
The other recipe took a little more prep work but it turned out to be quite tasty as well. It just happened to be on the same page as the first one and looked too good not to try it.
HEART ATTACK POTATOES
5 slices bacon, chopped
1/2 small onion, chopped
5 medium red potatoes, thinly sliced (like potato chips)
Salt and pepper to taste
Cook bacon and onion in skillet. Add potatoes and salt and pepper. Cook over medium heat until tender.

I don't like most tomatoes either, but I do like Romas. I'll have to try these out!
They both sound simple enough. I may have to try one (or both) of them over the weekend.
